So I'd like to make the purchase of Bitcoins just one more step anonymous. I've already done one purchase where I deposited cash at a local bank and had BitInstant send me the coins for it, to a wallet address. I then transferred from that wallet to bitcoinfog, then to SR for my first purchase. All went well, I think.
But, since I can do a Cash to BitCoin Address deposit with BitInstant, is there any reason I can't have BitInstant deposit directly to the address that bitcoinfog gives me for deposits? Is there any reason I have to send the coins to a personal address first?

I don't see any reason not to send the BTC straight to Bitcoinfog - indeed using a secondary wallet wouldn't do you much good as any fool with access to the block chain would see the transfer of BTC from that address to Bitcoinfog.
This is a fairly secure method to obtain BTC but I would suggest you consider using cash in the mail / Moneypaks in future as that way it will be impossible to trace the Bitcoins back to you - the US vendors CoinBox and BlueSkyTraders can help you with this.
