Both the app Beem and the app Gibberbot can be shunted through Tor through using the program Orbot and both also support Off the Record Messaging (OTR) which will encrypt each message. Most importantly once the conversation is over anyone could encrypt a message in the same way you had so it would be impossible to prove you had sent a specific message.Obviously these apps are only as good as the device they're installed on. Make sure you get a phone with a recent version of Android which supports full device encryption. At the very least install your chat software onto a removable SD card which you can easily dispose of if things start taking a turn for the worse.If you aren't blessed with a smart phone I would suggest you use an old school pen and paper cipher in your text message.
