does anybody know how much transactions LE can see if they have the databases under their control? Do they see all historic transactions or what?

The $64,000 question is: how much data is in the databases? You have to assume that all the current data for the last few months is there, plus what is in the backups, which can stretch right back to the beginning, if DPR wasn't careful.
It is highly prudent to assume that the authorities have access to EVERYTHING. If you didn't encrypt your message traffic...
