How do you encrypt text on a mac v.10.5.8? For example, text in the address box when placing an order. I have tried highlighting the text and hitting command-->shift--> e

Yes I have tried this also. I have tried command --> shift --> e to the text in the text edit window and have also tried going through "services" to try and encrypt it but this is not an option. Is my software too old perhaps?

You're using Leopard. Unfortunately, there is no other option but for you to use the command-line.
Louis Cyphre wrote a tutorial on here about using the command-line for GPG. The command-line instructions are the same for all OSes.
