Actually boiling an egg is not difficult, but correctly soft-boiling one - hard white, soft yolk - is quite an art.
It used to be poached eggs are quite an art, but I figured out a short-cut. Put the eggs in the fridge. For hours. Make sure they're cold. Get a pain of boiling water, reduce the heat, crack one or two into the pan, return heat until the water starts to move then turn the heat off. Leave them there until you can "see" them done. There are thousands of poaching tips - using vinegar, stirring the water, etc. - but they're all rubbish. Cold eggs have - relatively to the whites - colder yolks. That means the whites cook quicker, the outer of the yolk cooks relatively quickly too, but the cold centre of the yolk prevents it from overcooking. Not only the most delicious way of eating eggs, also (along with boiling) the healthiest.
I'm quite a cook too. I have a lot of recipes - now focused on more healthy eating - I'd like to contribute some if I'm allowed here?
