is it safe to use a one time yahoo account for my zipzap transaction when they ask for an email?

Yes, if you create and access it over Tor, which you can. Yahoo Mail addresses are good, legit-looking throwaway accounts because you can create them over Tor, unlike Gmail accounts.

What would happen if you didn't use tor to make it?

If LE can identify your SR bitcoin address as belonging to SR, they can follow the bitcoin trail back to BitInstant/ZipZap, subpoena Yahoo and get your IP address. It's all theoretical, but making a Yahoo Mail account over Tor is easy enough that you might as well do it.
